Stepping into an ostatu means stepping into a way of understanding Gipuzkoa. These are places where gastronomy mingles with conversation, where the landscape and local produce reach the table, and where much of our villages' life is still shared. Each has its own personality, history and way of welcoming guests, but they all share something essential: a connection to the land, community, hospitality and a cuisine rooted in tradition.
This is the starting point for the Gipuzkoa Ostatus Tourism Network, an initiative promoted by the Gipuzkoa Hospitality Business Association and the Provincial Council of Gipuzkoa to celebrate this shared character and introduce it to those who visit us. A network beginning to take shape around 16 ostatus. A living, diverse network born from the region, offering a way to discover Gipuzkoa through its villages, its tables and the people who bring them to life.






The term ostatu comes from Basque and has traditionally referred to establishments offering food and lodging. Its origins are linked to the old travel routes that crossed Gipuzkoa and to the consolidation of the region's towns and roads during the Late Middle Ages.
Over the centuries, these spaces played an important economic and social role, welcoming travellers, traders and neighbours. Over time, many have become municipally owned establishments whose operation is awarded to private managers through a tendering process, combining a business activity with a clear commitment to public service.
Beyond their hospitality role, they often support the community's everyday life by providing meals for small schools, serving local businesses or facilitating the sale of basic necessities. They therefore remain essential spaces for social and territorial cohesion, acting as true hubs of rural municipalities: places to meet, build relationships and bring local life together.


Ostatus are places with open doors and a table ready to welcome you; spaces where locals and visitors meet, and where the experience of discovering Gipuzkoa begins.
The logo is based on an arched doorway, inspired by traditional Basque architecture. This large doorway is, in turn, made up of several smaller doors: the doors of each ostatu. Stepping through the door of an ostatu means entering Gipuzkoa at its most authentic; opening the way to discover its villages, landscapes, gastronomy and people.
These doors also evoke the long tables of the ostatus and are decorated with 3 stars shaped like traditional medieval screws, which can be interpreted as plates on the tables or the knobs or screws on the doors.
In this way, a single image brings together the main concepts of the Gipuzkoa Ostatu Network: the door and the welcome, the table and the encounter.
